Pancakes are a dish that needs no introduction. It is the most common breakfast for many, a symbol of coziness and home warmth. And although there are many modern variations of cooking this dish, the classic recipe on yeast remains an unchanged and delicious classic.

These fluffy golden pancakes with a light texture and delicate aroma are never boring. They are prepared on the basis of yeast dough, which needs time to infuse to ensure the characteristic splendor.

The recipe for these pancakes will be very useful for children for breakfast, when you don’t want to go to the store again, and you need to feed the children something. A jar of jam, fragrant tea, an interesting book or series – and it seems that not everything is so bad in our kingdom!

If you pour more dough on the pan, you will get pancakes. You are unlikely to wrap anything in such pancakes, but they can be drizzled with a sweet sauce or greased with butter, pate, and you will get a delicious sandwich or a sweet cake.

 

Yeast pancakes: traditions and modernity

Yeast pancakes are associated with childhood and simple home cooking. According to this recipe, they turn out extremely soft and tender, although they are easy and quick to prepare. The dough is made on the basis of eggs, sugar, milk, flour and yeast. To prepare the sponge, you need to activate the yeast in warm milk (30-35°C).

It is important to note that the temperature of the milk should be comfortable for the finger – if you can calmly hold your finger in the milk for several seconds, its temperature is suitable for activating the yeast.

You can serve yeast pancakes in the American style – with maple syrup, or with other fillings unusual for us – peanut butter, chocolate cream or Greek yogurt. But traditional options are also suitable – jam, sour cream and honey.

Recipe for yeast pancakes

Ingredients:

  • Milk – 300 ml
  • Pressed yeast – 20 g
  • Sugar – 50 g
  • Wheat flour – 500 g
  • Chicken eggs – 1 pc.
  • Sunflower oil – 50 ml

Preparation:

  1. Prepare the sponge: Add yeast and sugar to warm milk and mix. Leave in a warm place for the yeast to activate.
  2. Prepare the pancake dough: Add an egg to the sponge and mix with a whisk. Then add the flour and mix until a homogeneous, flowing dough without lumps is formed. Cover it with a towel and leave it to rise for 1-1.5 hours.
  3. Fry the pancakes: Heat a pan with oil, use a tablespoon to put the dough into it, forming pancakes. Fry on both sides until golden brown, 2-3 minutes each.
  4. Serving: Place the pancakes on a plate and serve immediately with sour cream or honey.

Tips for making yeast pancakes

  • Allow the dough enough time to rise so that the pancakes are fluffy.
  • Add a little oil before each batch during frying.
  • If the dough is too thick, add a little warm milk, if it is liquid – a little flour.
  • Add a pinch of vanillin or lemon zest for aroma.
