  • 2 eggs
  • 120 ml milk
  • 20 g sugar
  • 40 ml heavy cream (35% fat)
  • 100 g fat (for frying — lard, butter, or vegetable oil)

  • Prepare the batter base:In a bowl, combine the egg whites with a pinch of salt, sugar, and half of the milk. Whisk lightly.
  • Add flour:Gradually sift in the flour and mix until smooth.
  • Finish the batter:Add the rest of the milk and stir. Let the batter rest for 25–30 minutes to develop flavor and texture.
  • Prep the apples:Peel and core the apples, then slice into 1–2 cm thick rings. Sprinkle with a bit of sugar and let them sit while the batter rests.
  • Fold in whipped cream:After resting, gently fold the whipped heavy cream into the batter.
  • Fry the apples:Heat the fat in a frying pan. Dip each apple ring in the batter using a fork and fry until golden on both sides.
  • Serve:Dust the hot apple fritters with powdered sugar and cinnamon. Serve immediately while hot and crispy!
