Instructions
 

  • Shred the cabbage: Remove the outer leaves and core of the cabbage. Slice it very thinly using a sharp knife or mandoline. The thinner, the better—it helps the cabbage caramelize evenly.
  • Caramelize the cabbage: In a large, heavy-bottomed pan or skillet, melt the butter or heat the lard over medium heat. Add the shredded cabbage and a generous pinch of salt.
