Authentic Hungarian Goulash – Hearty Beef Stew-Soup

- 2 tbsp oil (olive or neutral)
- 1 tbsp butter
- 2 medium onions, chopped
- 700 g (1.5 lb) beef chuck roast, cut into chunks
- Salt and black pepper, to taste
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2-3 fresh tomatoes, chopped
- 2 tbsp Hungarian sweet paprika
- 1 tsp caraway seeds (optional)
- 1 bay leaf
- 4 cups (1 liter) beef stock or broth

- 2 medium carrots, sliced
- 2 medium potatoes, cubed
- Fresh parsley, chopped (for garnish)
Instructions
- Season the beef with salt and pepper.
- Heat oil and butter in a Dutch oven over medium heat. Add chopped onions and sauté until golden (about 6 minutes).
- Add beef cubes and stir until no longer red on the outside.
- Stir in garlic, bell peppers, and chopped tomatoes. Cook for 3–4 minutes.
- Add paprika, caraway seeds (if using), and bay leaf. Stir well.
- Pour in beef stock and bring to a simmer.
- Cover and cook:In oven: 160°C / 325°F for 1.5 hours.On stovetop: Simmer on low for 1.5 hours, stirring occasionally.
- Add carrots and potatoes. Cook another 30 minutes until beef and veggies are tender.
- Remove bay leaf. Taste and adjust seasoning.
- Serve hot, garnished with chopped parsley.
