Ingredients

- 2 cups all-purpose flour
- ½ tsp fine sea salt
- ¼ cup ice water

- 1 cup prunes, pitted and chopped
- ½ cup granulated sugar
- 1 squeeze lemon juice
- Water, enough to cover the prunes

- 1 egg
- 1 tbsp milk or cream

- Frozen puff pastry sheets (thawed)
- Prune jam or other jam
- 1 egg

Instructions
Traditional Finnish Christmas Stars:
- Make the Pastry Dough: In a large bowl, beat ricotta and butter until fluffy. Mix in flour and salt. Add ice water gradually until dough forms. Wrap and chill for at least 3 hours or overnight.
- Prepare the Prune Jam: In a saucepan, combine prunes, sugar, lemon juice, and enough water to cover. Simmer until thick and jammy. Cool completely.
- Roll and Cut: Roll chilled dough to 1/4-inch thickness. Cut into 3-inch squares. Make four diagonal cuts towards the center.
- Assemble Stars: Place 1/2 tsp prune jam in the center. Fold alternating corners into the middle to form a star.
- Bake: Brush with egg wash if desired. Bake at 400°F (200°C) for 8–11 minutes until golden. Cool slightly, then dust with powdered sugar.
