Ingredients
  

  • 1 tbsps butter
  • 1 onion, finely chopped
  • 2 tbsps all-purpose flour
  • 500 ml (2 cups) vegetable or beef broth
  • 1 can diced tomatoes (400g) or 500g fresh tomatoes, blended
  • 1-2 bay leaves
  • 4-5 whole allspice
  • 1 teaspoon black peppercorns
  • A pinch of cinnamon optional
  • 200 ml (3/4 cup) sour cream
  • 1-2 tsps sugar adjust to taste
  • 1-2 tsps white vinegar to balance sweetness
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Prepare the onion:
    Melt butter in a large pot over medium heat.
    Add the finely chopped onion and sauté for 4-5 minutes until soft and golden.
  • Create the roux:
    Sprinkle flour over the onions and stir continuously for 1-2 minutes to create a thickening base.
  • Add the broth and tomatoes:
    Gradually pour in the broth, stirring to prevent lumps.
    Add diced/blended tomatoes, bay leaves, allspice, and peppercorns.
    Bring to a gentle simmer and cook for 10-15 minutes.

  • Blend for smoothness:
    Remove bay leaves and allspice.
    Blend the sauce with an immersion blender until smooth (optional).
  • Incorporate the sour cream:
    Lower the heat and stir in sour cream until fully combined.

    Looks good! Will definitely try this, but might need to adjust the sugar/vinegar based on my tomatoes’ sweetness.
