  • Add Flour GraduallyMix in 7 cups of flour, one cup at a time. Stir in raisins (if using) with the final cup of flour. Switch to dough hook and knead 2–3 minutes until smooth and elastic.
  • First RiseCover and let rise in a warm place until doubled in size, about 1–2 hours.
  • Shape the BraidsPunch down the dough and divide into two portions. Divide each portion into 4 ropes and braid. Place on parchment-lined baking sheet.
  • Second RiseCover loosely and let rise again for 30–45 minutes, until puffy.
  • Egg Wash and BakePreheat oven to 375°F (190°C). Brush loaves with egg wash, sprinkle with pearl sugar, and bake for 25–30 minutes until golden brown.
