German Eintopf
Ingredients
- 1 small onion
- ½ garlic clove
- 1 large carrot
- 2 large potatoes
- 1 Bockwurst
- Salt
- White pepper
- Black pepper
- Spring onions
Instructions
- Sauté the aromatics: Heat 1 tsp of vegetable oil in a medium pot over medium heat. Add the chopped onion and garlic and sauté for about 2 minutes until fragrant.
- Add the veggies: Stir in the carrots and potatoes, allowing them to cook for another 2 minutes.
- Simmer: Pour in just enough water to cover the ingredients. Bring to a gentle simmer and let it cook until the potatoes are almost tender and the carrots remain slightly firm (about 12-15 minutes).
- Add the Bockwurst: Toss in the sliced Bockwurst and let it cook for an additional 3 minutes.
- Season & finish: Season with salt, white pepper, and black pepper. (Be careful with salt—Bockwurst already contains a good amount.)
- Test for doneness: Pierce the potatoes with a fork—if it slides through easily, they’re ready!
- Garnish & serve: Turn off the heat and sprinkle chopped spring onions on top for extra freshness and texture. Serve hot or warm!
