Instructions
- Cook the RiceIn a saucepan, bring rice and beef stock to a boil. Cover, reduce heat, and simmer until fully cooked (about 15 minutes for arborio rice). Set aside to cool.
- Prepare the CabbageBring a large pot of water to a boil. Prepare a large bowl of ice water.Remove outer leaves from cabbage. Spear the core with forks or a skewer.Submerge in boiling water for 90 seconds, then remove and peel off soft leaves.Place leaves in ice bath. Repeat until you have 16–20 leaves. Reserve 2 cups of cabbage water.
- Make the FillingSauté diced onion in butter until soft. Let cool slightly.In a large bowl, combine cooked rice, onions, breadcrumbs, eggs, meat, salt, pepper, and marjoram. Mix thoroughly.
