A traditional Romanian dip made from roasted courgettes, Greek yogurt, garlic, and dill. Light, refreshing, and perfect for summer meals. Serve it cold with toasted bread or flatbreads.
Ingredients
- 2-3 courgettes (zucchini), cut in half
- 2-3 garlic cloves, minced
- 3 tbsp Greek yogurt (or a mix of Greek yogurt & mayo)
- ½ pack fresh dill, finely chopped (adjust to taste)
- Salt, to taste
- Freshly ground black pepper, to taste
- Olive oil, for roasting
Instructions
- Preheat oven to 180°C (350°F).
- Prepare courgettes by cutting them in half and placing them on a baking tray. Sprinkle with salt and drizzle with olive oil.
- Roast in the oven for about 40 minutes, or until soft and slightly golden.
- Scoop out the flesh using a spoon and place it in a colander to drain excess liquid.
- Finely chop the drained courgette flesh with a large knife until creamy, or use a blender for a smoother consistency.
- Mix the ingredients: In a bowl, combine the courgette puree, minced garlic, Greek yogurt, and fresh dill. Stir well.
- Season with salt and black pepper to taste.
- Chill in the fridge for at least 1 hour before serving.
- Serve cold with toasted flatbreads or crusty bread. Enjoy!
