Crepes: From Pagan Rites to Modern Cuisine

The history of crepes goes back to ancient times. It is believed that the first crepes appeared in pagan times and symbolized the sun. Over time, crepes became an integral part of Ukrainian culture, they were prepared for holidays, rituals, and simply for family tea parties.

In Ukraine, there are many varieties of crepes: thin, thick, with and without fillings, on milk, kefir, whey. Each region has its own unique recipes and cooking secrets. But custard crepes on milk always remain one of the most beloved due to their special texture and taste.

Custard Crepes: Cooking Secrets

Custard crepes on milk and boiling water are distinguished by their porous texture, softness and at the same time thinness. To prepare a real custard crepe dough, you must follow a few simple rules:

  1. Proportions: It is important to strictly adhere to the proportions of the ingredients, because the consistency of the dough and the quality of the finished crepes depend on this.
  2. Flour: The flour must be thoroughly sifted so that it is saturated with oxygen and becomes more airy.
  3. Boiling water: Hot water (boiling water) must be added to the dough at the very end to get beautiful, elegant bubbles. It is thanks to the boiling water that the crepes acquire their unique porosity.
  4. Rest: The finished dough should be left for 20 minutes at room temperature so that it “matures” and becomes more elastic.
  5. Frying: Crepes should be fried in a well-heated pan on each side for 25-30 seconds. You should not wait until the edges of the crepe dry out, because then it will remain soft inside and will not require additional lubrication with oil.
